Brewed with a 250-year-old traditional technique and Nada's famed natural spring water from Mount Rokko, Hakutsuru Excellent Junmai is a classic and versatile sake. Sake rice’s starches are concentrated in the center of the grain. The first step to making sake is to mill or “polish” the rice to get rid of the fats and proteins. The more the rice is polished the cleaner, lighter, fruitier and more refined the sake will be. Most Junmai is made with rice that is milled to 70% or less of its original size. Joto Junmai is made by the Eiko Fuji Brewery, led by the 13th generation of the Kato family. True to the classic junmai style, it is rich and solid, but it is more inviting with its clean, fruity quality.

Joto Nigori is brewed by the Nakao Brewery, which was founded in 1871and is now managed by the 6th generation of the family. The brewery has pioneered revolutionary techniques and ingredients in the sake industry. Unlike most nigoris, which are syrupy sweet, Joto Nigori shows depth and earthy notes, which make it more food-friendly and sophisticated.

The castle town of Kanazawa is picturesque, with cobblestone streets, charming buildings, and plum trees! The brewers used local small and medium sized Kanazawa plums to craft this beautiful umeshu. The plums used are a bit more tart, so expect a healthy dose of tartness with undercurrents of sweetness.

With 130 years of history on their shoulders, the Kikusui Sake Company of Niigata prefecture built themselves up from the bottom. The name "Kikusui" is a reference to a Noh theatre play, wherein the dew (Sui) from the petals of chrysanthemums (Kiku) grant eternal life.

 

Kikusui Perfect Snow is an unfiltered "Nigori" type of sake, which is very sensitive to light. The 180mL can has been specially designed to block out the light. Also the sake is filled all the way to the top to avoid oxidation and ensure freshness.

The subtle texture of the “moromi” granules, created by carefully fermenting only the finest quality rice, leaves a striking impression. Kikusui Shiboritate Junmai Nama Genshu Sake is a bold, unpasteurized, and undiluted sake from Niigata, Japan, bursting with freshness and character. A sake that was initially launched 20 years ago to illustrate the brewery's style and give people a taste of their region, this brew expresses sweetness, umami, acidity and a hint of astringency with wonderful harmony.

This is a lightly hazy sake, with a rich texture, and deep intense flavors reminiscent of popcorn, nutritional yeast, yogurt, and mango. Hanatomo Usunigori is made with naturally occurring yeast. Using non-commercially cultivated yeasts like this is a rare move in the sake world. For one, it's risky. Sake production in the last hundred or so years has grown to be a highly refined and controlled thing, producing brews of exquisite precision of flavor. Miyoshino Brewery here combines approaches of wild non-interventionism (natty yeast) with a sophisticated and unique 4-stage fermentation process (4-Dan shikomi, for the nerds). Ultimately this is just a long way of getting out that this sake is rich, complex, structured, and very wild, all at once.

Gorgeous, memorable, elegant...this kutani-ware ceramic bottle in a Paulownia box is almost enough to justify the price on its own. 

It's with a sigh of relief that the elegance isn't just surface level. As I write this, I've been sipping slowly on "100 Years" over the course of 6 weeks, watching it evolve. In this period, I've also had the great honor to visit Nishide Shuzo and meet Nishide-san in person. He's incredibly talented, experimental, smart and kind. One of my great inspirations: Yusuke Shimoki of Engawa bar in Yamanaka-onsen, when pressed, said this of Nishide-san:
