Cristalino tequila has taken the world by storm. Contraluz Cristalino Reposado Mezcal is the first mezcal to employ the technique of maturing the spirit, then filtering it to achieve a clear appearance. This one starts with espadin agaves from Tlacolula and Valles Centrales in Oaxaca, Mexico. The agave piñas (hearts) are cooked in underground stone ovens and shredded. After they have fermented for up to 10 days, they are distilled in copper-pot stills. Then, the mezcal matures for 6 months in charred American oak casks before being filtered through activated charcoal, removing any impurities and color, and resulting in a crystal-clear spirit. Contraluz Cristalino is a balanced mezcal with notes of agave, vanilla, honey, dried fruit, and gentle smoke.
